A little luxury does not have to cost much nor be a tedious task.
Pop into your local fish market or any decent seafood store and pick up a dozen scallops in their shell, whip up the garlic and chive butter recipe below and pop under a hot grill.
In no less than 5 minutes you will be eating soft, caramelized, buttery scallops right off their own little plate, don’t forget the glass of champers on the side!
- 1 dozen scallops in shell (check for grit and ensure clean)
- 2 tablespoons of good quality butter (avoid margarine)
- Fresh chives, chopped
- 1 clove of crushed garlic
- Juice of 1/4 of a lemon
Melt the butter and mix with freshly crushed garlic, squeeze of lemon, chives and salt and pepper.
Spoon melted butter mix over over each scallop (as per picture below).
Pop under a hot oven grill for 5 mins or until golden. Serve!
